Sara Campagna 1/30/2020 9:01 PMHistorically, we have primarily only eaten seafood that my husband has either caught or we've harvested, with the exception of sushi every now and then. I stopped buying shrimp many years ago after learning about the negative impacts, so I would say that in general, we do the best we can staying within the advised guidelines. Fish is our primary source of protein, although sadly the fishing has gone downhill rapidly in the past couple years and we no longer have the surplus we used to. -
REFLECTION QUESTIONFood Zero-waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Sara Campagna 1/30/2020 8:47 PMI've started a to put food scraps into a container in the freezer and will make veggie broth out of them once enough has been collected, then compost. I've also started to use the tops of some veggies (beets, carrots, radishes) in smoothies. Some are tastier than others but rumor is that there's a lot of nutrients in them! -

Sara Campagna 1/30/2020 8:44 PMAs Charles Massy stated, "If you damage one system, you damage them all." Everything is so interconnected and we cannot discount the impact that either healing or hurting the environment has on everything. Regenerative agriculture positively impacts the community by increasing the health of the land while minimizing the negative effects of corporate farming, and thus the crops, nutrient density of the foods, the health of the people consuming it. -
REFLECTION QUESTIONFood Learn More about SilvopastureHad you heard of the term "silvopasture" before now? After learning more about it, what do you think is the biggest advantage of silvopasture?
Sara Campagna 1/30/2020 8:29 PMI had no idea what silvopasture was before. It seems as though the biggest advantage is reducing the carbon footprint and maintaining the health of the land. It's troubling that only 1% of farms in the US are doing it. Hopefully with more education this can change. -

Sara Campagna 1/28/2020 10:24 AMI didn't realize everything that palm oil was in, including beauty products. Thankfully, I don't use any that were on the list and I eat little processed foods. They are so sneaky putting it in things with different names! So thankful for the education. I don't drink coffee and very rarely have meat, dairy and eggs, but I do love some good chocolate! I have always looked for fair trade, shade grown and organic when buying chocolate but now I'll look for the little green frog signaling a Rainforest alliance certified product. When I do buy meat, dairy and eggs, I'll be even more diligent about sourcing and knowing what they're being fed.-
Kimberly Wasserman 1/28/2020 7:10 PMI am on a quest to find the little green frog on chocolate chips too. I couldn't find one at shop-n-cart, though I did see a brand that claimed to be environmentally friendly and fair trade. Have you found the frog on any specific brands in town?

Sara Campagna 1/28/2020 10:17 AMWalkable/biking friendly, no single use plastics, charging stations for electric cars, city wide composting (like recycle/garbage pickup), increased healthy vegan/vegetarian options for eating out, increased farmer's market offerings on weekends, solar on all businesses/residences, grey water systems in place, community education, increased physical movement and outdoor education for kids in schools, and active community opportunities. There is a lot of policy that would need to change in order to make this a reality and I'm sure increased incentives and a whole lot of education. -
