Walkable Cities
I will take a walk for 30 minutes each day and take note of the infrastructure that makes walking more or less enjoyable, accessible, and possible.

REFLECTION QUESTIONFood, Agriculture, and Land Use Zero-waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Sidney Castanon 4/26/2023 9:24 PMI have been keeping track of my waste and storing it to reuse in my meal preps. Meal prepping was something I had been doing since I started weightlifting, so it has been fun to figure out how much my intake is. -
Sidney Castanon 4/26/2023 9:22 PMThe eco-challenge is going well for me and I found that I would like to continue doing these challenges and incorporate them into my everyday life. Going meatless was a bit challenging at first, because I enjoy weightlifting and finding new main sources of protein was the most challenging. -
REFLECTION QUESTIONAction Track: Healing & Renewal Eat MindfullyMindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

REFLECTION QUESTIONAction Track: Healing & Renewal Go for a Daily WalkWhat have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?
Sidney Castanon 4/11/2023 12:13 PMOn my daily walks, I noticed that a lot of pathways could be improved for easier access to get from place to place. -
