    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    I have been keeping track of my waste and storing it to reuse in my meal preps. Meal prepping was something I had been doing since I started weightlifting, so it has been fun to figure out how much my intake is.

    The eco-challenge is going well for me and I found that I would like to continue doing these challenges and incorporate them into my everyday life. Going meatless was a bit challenging at first, because I enjoy weightlifting and finding new main sources of protein was the most challenging.

    On my daily walks, I noticed that a lot of pathways could be improved for easier access to get from place to place.
