    Action Track: Healing & Renewal
    Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

    When I eat with mindfulness, I take more time to swallow my food. Chewing and tasting each pieces of food taken in during a meal is an important process of practicing mindfulness while eating. As a result, I feel more full with less food and I better digest what I swallow.
    I also try to eat at regular times and places, gaining awareness of the food through a healthy eating routine.
    Somehow, it also makes me reflect on the quality and freshness of the ingredients I am having, with a willingness to consume healthy food, not only for myself but also for the environment. I notice the texture, the taste, the shape and smell of each bite which is a pleasurable experience that I do not want to rush.
    I do recognize that it takes training to eat mindfully and without distraction but it is truly worth it considering the health benefits it provides, not only physically but also mentally.

    How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?

    Eating more fruits and vegetables prevent me from constipation and other digestive problems. I also feel more energized as they are a great source of vitamins and minerals, including vitamin C and potassium. 
    On a bigger scale, eating less meat benefits the planet as raising cows, pigs and chickens generate as much greenhouse gas emission as all automobiles combined (greanpeace, n.d). In addition, meat consumption increases the risk of serious disease such high blood pressure and certain cancers, which could be avoided by making a diet more rich in fibers through fruits and vegetables.

    How does using human-powered transportation make you feel compared to using other methods of transportation?

    I feel like I am making a contribution to a more sustainable world, or at a lower-scale, to my city, by using human-powered transportation instead of using a car, or jumping on a bus. The city I live in is already quite polluted and packed with traffic jams. With my bike, I go faster than buses and car, avoiding traffic, and saving money. It empowers me every time I reach destination to see that I actually do not need a car to circulate in my city. I am proud to use my bike as my main mean of transportation and I encourage my friends and family to do the same, reminding them that biking vs driving helps reduce the amount of carbon dioxide pollution, which is the main cause of global warming. It also helps living in a more quiet city.

    1. Why replacing incandescent lightbulb(s) with Energy Star-certified LED?

    I wanted to do my part in saving the energy the world consumes every day. LED reduces energy consumption as they use 90% less energy than regular bulbs, as they work like solar panels in reverse. Although they are three times more expensive than incandescent bulbs, they last much longer.  I believe the price is worth the results and the difference it makes for the environment. 

    "LEDs (light-emitting diodes) are the most energy-efficient bulbs available. Unlike older technologies, they transfer most of their energy use into light, rather than waste heat" (Project Drawdown Solutions). 

    2. Do I really need a car if I live and work in a city or can I go by bike as many times as possible?

    I live in a city with many cars where drivers complain about wasting time in traffic. I am a big fan of biking in cities as I I always get to my destination first, avoiding traffic or running into public transportation issues. Moreover, the health benefits are well known, as physical activities reduce all sorts of common diseases. If infrastructures are well designed, cities can reduce many car trips by encouraging their residents to use bicycles instead. I like the commodity of biking everywhere in the city I live in, while saving money at the same time by not using a car.

    Choose 5 sustainability practices from the EcoChallenge.  Explain your choice.  What do you anticipate to be the most difficult aspects of each challenge?

    1. eat mindfully

    It's important to choose foods mindfully and understand our natural resources. The challenge is about take the time and spending the money necessary to eat with a more ecologic mindset. 

    2. Use my bicycle

    Not using the car and reducing pollution. The challenge is about scheduling enough time to go to places so that I can take my bike rather than drive. 

    3. Explore my area

    Building awareness on nature and our natural environment. THe challenge is one more time about taking the time to go for walks. 

    4. Choose Led bulbs

    Building awareness on saving energy by using led bulbs. The challenge is about buying new bulbs and putting them up. 

    5. Donate clean cookstoves

    Research who and where to donate to help poor countries. Time and generosity are two key factors in regards to this challenge.

    Hello class

    My name is Jennifer. I was born and raised in France and moved to NYC 15 years ago to pursue my career as a ballerina. After touring the world performing with my dance company, I am ready for a career transition which I am hoping to achieve upon graduation at the end of the year. This is my last semester at CUNY and I loved learning about Business and Communication, my minor. My goal is to one day have my own business, something I created and that I could run with passion and dedication.

    I am looking forward to taking this class and learn more about sustainability as I believe is key to any companies’ success.
    After the first two weeks of taking this class, I have to say that I am very inspired by living a more sustainable lifestyle. I also want to make sustainability part of my future business. One thing that I am going to be more careful about, is eating less and less meat with the goal of becoming vegetarian one day. I also want to be very careful with trash at home and recycle as much as possible.
