      Ryan- I know the Boston Earth Day organizers are thinking about adding a vegetarian / vegan cooking demo into their virtual celebration. Might be worth checking out if you have time!

      There are some great recipes and resources if you check out the UC Davis Integrative Medicine and the Physicians Committee for Responsible Medicine (PCRM.org) websites--the latter has a ton of recipes and info on plant-based nutrition (and a 21 day kickstart)

      Thanks, Rishya! You jogged my memory that I have an Indian Cuisine cookbook that's been gathering dust in my (admittedly bloated) collection for years—I'll have to crack it open and try some new dishes. I LOVE Indian cuisine!

      If you're feeling adventurous and have the ability to (safely) get any needed ingredients, I highly recommend trying out recipes from different cuisines! South Indian and Ethiopian cuisines have numerous, excellent plant-based meals. Fun partner activity too if you have anyone living with you!
