I am glad to hear that you have been trying to eat more fruits and vegetables. I too have been trying to eat more vegetables and fruits to try and be healthy. Cancer, high blood pressure, cancer, heart disease, stroke, and obesity are all too common in my family and community. I like you also want to live a very long and healthy life I want to be able to run and exercise with my grandchildren. But also like you I find it very difficult to eat healthy at times, especially when we have to cook for ourselves. Especially in times of stress where you just want a quick meal and do not want to cook at all. However, I will continue to try to eat more fruits and vegetables to try and maintain a healthy lifestyle. A couple months ago I was in terrific shape and I want to be able to get back to that. I know that when I eat more fruits and vegetables I definitely feel much better about myself. One thing I have always struggled with is to lower my meat consumption. I need to find other ways to get my daily protein intake because I know how harmful red meat is towards the environment. The amount of land and water that is needed to raise cows only for them just to be killed is not worth the immense amount of carbon the whole operation outputs. I completely agree that we cannot continue at our current rate of water consumption to keep raising livestock. If everyone were to eat less meat I think we would see much lower amounts of carbon emissions. The problem is how are we going to do this. We know humans do not like change. I am an example. I think the most vital thing is to introduce people like myself to healthier and more eco-friendly alternatives like beyond meat. In this way people do not really notice the change, but are still helping the environment.
