Simon Jolly 4/29/2021 6:05 PMIt is very inspiring to see the benefits of creating resilient communities through the production of local foods. Volunteering at organizations like Beardsley Farms shows the power that local farms have to benefit local economies and uplift impoverished communities. As we increase our consumption of local foods, we will begin to mitigate the problems associated with food deserts. -
Simon Jolly 4/29/2021 5:38 PMAs this challenge comes to a close, I have come to see the immense personal benefits of eating plant based for the last month. There have been some truly beneficial aspects to my personal and mental health. Further, eating plant based has forced my consuming more local foods which promotes lower carbon emissions as well. -

Simon Jolly 4/29/2021 4:51 PMPeople in reacher countries eat more meat than people in other places because it is a more expensive, resource intensive commodity than plant based food. In the United States and other developed nations, we have created elaborate supply chains to sponsor the production of millions of animals specifically designated for our consumption each and every year. In developing nations, the meat market is much more decentralized and focused on bushmeat which has a variety of cultural and health concerns attached to it. Eating more meat promotes increased greenhouse gas emissions, and in many cases, has negative health consequences. In terms of both health and emissions, red meat is worse than white meat or poultry. -
Simon Jolly 4/20/2021 10:13 AMToday it was VERY tempting to eat meat! My friends and I went to Not Watson's and I really wanted get a hamburger but I did the black bean burger instead. -
Simon Jolly 4/20/2021 10:12 AMThings are going well! I am genuinely beginning to feel the impacts of going vegetarian for this month. I feel much happier and less weighed down.
