Minjung Kim 3/30/2021 6:52 PMIt has been over 21 days which is enough for the eco-challenge assignment, but I will keep doing this challenge every day as long as I can for myself and hopefully for the environment. Over the course of the challenge, I have greatly reduced my consumption of beef and pork, which was my primary goal. It was hard to completely cut out chicken, so it was usually chicken when I consumed meat. I found having one meatless meal in a day very easy, so I will try to shift to all meatless meals but maybe eating a little bit of meat a few times a week. -
Minjung Kim 3/16/2021 1:28 PMThere were a few days when I forgot to check in because something came up but other than that, my ecochallenge has been going pretty well. Since I eat only 2 meals a day, I thought not eating any meat the entire day would be quite challenging, especially for me who loves meat. This challenge forced me to find meat alternatives, eat more vegetables, and just have healthier diets in general, and I like it so far actually seeing the health effects. I hope more people who consume a lot of meat join this challenge together and try having 1 or 2 meatless meals a day. -
Minjung Kim 3/03/2021 4:38 PMI have been trying to have more meatless meals a couple of days now, and it's been not as hard as I thought. There were some days I only had 1 meatless meal because I had some chicken I bought before I started this challenge. But I found good alternatives to chicken, a vegan sausage and protein powder with very high protein content, so I think it would be easier to have 2 meatless meals a day now. Starting this challenge, I also have been trying to eat more vegetables and fruits and check nutrition facts of foods I buy more carefully.
