    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    We often eat the skins and tops of vegetables, for maximum nutrition. They can make soup stock, be used in stir fry, etc. For parts of a vegetable that we might not eat (rare), we then compost or use scraps to feed our farm animals.

    In addition to the sustainability impact, our local energy company is promoting EV purchases highlighting significant economic incentives in tax credits and rebates.

    Now that I am more aware about Bamboo as a sustainable alternative to many products, I can begin to take notice to how readily available Bamboo might be in my community, and consider finding either local sources or ordering Bamboo alternative items when not immediately, locally, available.

    While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    Aside from environmental benefits of eating/serving smaller portions, it also offers health benefits from less calories consumed, to increased energy/activity.

    How is your diet currently impacting deforestation? What can you do to decrease your negative impact and increase your positive impact?

    Currently my diet appears to have a small impact on deforestation. I don't consume many processed foods (where Palm Oil can be found) and I farm all of my own meat/eggs on property, hunt, and source what I don't farm/hunt from local farmers. The largest impact my diet has on deforestation is coffee. I, like many, drink quite a bit of coffee throughout the day. Now that I am aware of how coffee harvests are contributing to deforestation, I will begin to scale back my coffee drinking through the day and introduce other beverages into my diet.

    I have already completed many of the Energy Star recommendations listed here (https://www.energystar.gov/campaign/waysToSave). However, two immediate next steps for me include installing a programmable thermostat and adding ceiling fans to a few key rooms in my house, to reduce use of the furnace/AC unit.

    As long as my food has been properly handled and stored, I can consider my food "safe" past any printed date. By using food items beyond an indicated date, assuming look/smell is appropriate, I can minimize the amount of food that is wasted in our household.

    I can become aware of peatlands near me, and support groups who are working to conserve these areas, locally. As well, reducing the use of paper reduces the reliance on pulp farming from peatland areas; I can certainly do my part to reduce my own use of paper.
