Así es como debería de ser considerada, un producto de lujo, esto no únicamente por todas las consecuencias medio ambientales que acarrea como el altísimo uso hídrico, el despeje de áreas para el establecimiento de ganado, los gases efecto invernadero liberados a las atmósfera, sino por el hecho de que consumirla apoya procesos de inequidad alimentaria y malnutrición en algún lugar del mundo. La trazabilidad puede ser un poco difusa pero creo que una dieta basada mayoritariamente en plantas puede propiciar un mundo ecológicamente más estable y equitativo. -
