    I have only vegetarian meals for well over a month now. I feel great and I have not been as sluggish as I used to. However, I'm thinking about going pescatarian...I miss fried chicken :(

    I am currently making my Eco-Challenge presentation and it made me realize how different my perspective is between now and when I started. I honestly did not think I would, or could, give up eating meat because of a class assignment. Well, I tried it and it wasn't too bad.

    Differentiating between sell by, use by, and best by dates:

    During the 1970s consumers pushed food companies for more information about the food they were being sold in stores. To respond to this need companies began labeling foods with phrases and dates that indicate when different qualities about the food can be expected. Since then, different phrases have been used to indicate different things about the product. A “Best if Used By/Before” label is used to show the date when the product will have the best flavor and quality according to the manufacturers. A “Sell by” label is meant to indicate proper turnover time for retailers and ensures proper shelf life for the consumer. The “Use by” label describes the last date at which the product can be used at peak quality according to the manufacturer and is not an indicator of safety except for when used on baby formula.

    How does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?

    It is a empowering to know that these dates are determined by the producers and are not regulated by the federal government. This makes me believe that these dates may be skewed in order to influence the amount of purchased product lost to spoilage. I feel comfortable keeping products past the expiration date if a “Best if Used By/Before” or “Sell by” label is used on the product. A “Use by” label should be taken more seriously on animal products. Always examine your food before cooking and let that be the determining factor.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    Why do people in richer countries eat more meat than people in other places?
    -Citizens within more developed nations experience higher levels of infrastructure and commerce within the health, agronomy, and food distribution sectors. This makes meat readily available for mass consumption and has established a societal preference for meat products.
    How does eating more meat affect our bodies, our planet, and other people?
    -The overconsumption of meat is linked to serious health concerns including cardiovascular diseases and increased risk of stroke or heart attack. Our planet also experiences many environmentally degrading processes in response to western society's meat-centric preference. CAFOs produce a major portion of all greenhouse gas emissions and are also responsible for causing hydrological and aquatic damages. Consuming a meat centric diet drives these processes, and in turn, worsens the environment for others and near future generations.
