    A delicious meatless meal this week was a non-dairy creamy tomato soup.  You asked for some recipes so here you go...  Due to illness and laziness I didn't saute or roast any of my veggies in advance, but it would be tastier if you did. 
    Boil 1 head cauliflower, 1 onion, 4 cloves of garlic peeled, 4 large carrots, 28 oz can of tomatoes (or tomato sauce - which was all I had in my cabinet) in 4 cups of veggie broth with Italian seasoning, dried basil and salt and pepper to taste.  Once boiled throw it all in the blender and there you go.  Creamy, yummy, tomato soup

    Another awesome family movie night that represents diversity, the 1990's Dr Dolittle with Eddie Murphy.  Slightly older audiences, PG-13 for crude humor and language, our kids didn't get the adult humor, but loved the crass humor, which they didn't totally understand.  It was a funny movie we enjoyed.

    For our veg dinner tonight we had a delicious wrap or salad bar... hummus, pesto, balsamic were sauce options with veggies, Mediterranean theme, such as cucumbers, peppers, carrots, lettuce, tomatoes, and olives.  We roasted some other veggies.  it was so yummy!

    I have created a challenge for myself about sharing EDI (Equity, Diversity and Inclusion) information.    Here goes... The country we live in is not equitable.  Diverse groups are under-represented, if ever represented, in the media.  A friend of ours brought our attention to how complicit we all are when we blindly watch movies and shows that represent little to no People Of Color (POCs).  

    Here is a list from my friend Jordan of media that is worth watching (and in many cases very important to watch):

    I just got home from seeing "Just Mercy".   

    Attending viewings of important films, ready books, listening to podcasts, watching Ted Talks, asking questions about other people's experiences is the pathway to becoming Woke.  White friends please see this movie.  It was a powerful movie telling a true story about a lawyer in Alabama fighting for death row inmates  who were victims of systemic racism.  Only 3 other people were in the theater. These stories are incredibly hard to watch, but it is time we stop turning away because it's too hard to look at.   I hope my ramblings have convinced one other person to see it :-) .  End rant.
