    I got a compost bin for my birthday this year (actually, a vermicomposter which uses worms to eat the food faster). Since then, me and my roommates have not really used it because we haven't set up a system to efficiently move our food waste into the bin. Also, since it is a small bin that doesn't get turned a lot, we have to be particular about what food waste goes into it. This weekend, I decided it was time to revamp our bin so that we can actually get use out of it and divert some of our food waste. I went to the store to pick up some more worms (a lot of ours had died since I did not protect them during the winter). I turned what was already in there, added some new worm food and coco coir, and turned it. I am excited to start really using our bin, and this part of the ecochallenge was just what I needed to motivate me.

    Producing food that goes uneaten squanders many resources—seeds, water, energy, land, fertilizer, hours of labor, financial capital. Which of these kinds of waste most motivates you to change your behavior regarding food waste? Why?

    I want to change my behavior regarding food waste mostly because I see just how much is thrown away. I notice how I am used to grocery shopping based on planning my meals way in advance, which really just leads to wasted food when it goes bad or when I forget about it. Since moving into an apartment, the amount of trash we produce from our kitchen alone is really insane. Also, I am motivated by the lost energy and land that could be used for other purposes; I am particularly motivated by the anaerobic decomposition food waste undergoes in landfills that produces green house gases. If I reduce my food waste, through both composting and buying less, I can reduce energy consumption, land use, and GHG production, which are all important for sustainability.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    People in richer countries eat more meat because meat production costs are high, so eating meat is really only available to those who can afford it. Additionally, the supply chain to get meat out to a large number of people is usually more efficient in richer countries, making it easier for lots of people to eat lots of meat (as opposed to smaller family farms that might produce a little meat and lots of plants, which is more common in poorer countries than industrialized meat production). Eating lots of meat, particularly red meat, has poor impacts on heart health and can contribute to diseases. It also harms our environment through methane (a GHG) emissions produced by cattle farms and toxic runoffs into water sources. There are ways to eat meat sustainably, but if people in wealthy countries lower their meat consumption, lots of good could be done for the environment and for our bodies (not to mention the ethical issues concerning poor conditions in animal feed lots and industrial systems).

    A few days this week, I ate completely vegan. It was more difficult than I thought it would be, mostly because I had not gone grocery shopping to prepare and I usually eat yogurt or eggs for breakfast. However, I really loved trying some of the vegan options at restaurants I go to regularly. I ate impossible meat at Qdoba on campus where I would normally order chicken, and I really enjoyed it. I also ate a black bean burger, which I had never tried but liked a little more than I like beef burgers anyways. I think eating vegan some days is a realistic option for me because I do enjoy the food; I just need to prepare for it and make sure I have vegan options available. Generally, I have really enjoyed the experience of trying new things out.

    I think so far my daily challenge is going okay, although certain days are harder than others and I definitely forget sometimes and will order meat without thinking. That is part of the reason my days have been so sporadic with doing fully vegetarian meals, although on the days that I do eat vegetarian, I find that I really enjoy it and usually have a lot of energy. This is encouraging, and now that we are entering April and I need to start checking off my challenge more frequently, I think I am ready to try to do vegan days. I am more familiar now with places around campus that offer vegan options, and I am excited to try them out instead of sticking with my usual chicken or beef dishes.

    Today was the first day I looked into what challenge I wanted to take on for 21 days. I have wanted to cut most meat out of my diet for a while now, so choosing the meatless meals goal was a great way to get started. Today, I ate completely meatless meals (although I don't think I can be meatless for 21 consecutive days, because my roommates and I cook together). I know it is still a good start with a big impact. Hopefully by the end of this challenge I will be a lot more comfortable and even have several days where I am completely vegan. Today was a successful start.
