Kelsey Roche 4/20/2021 3:21 PMAs my last day comes for this project, I reflect on everything I have learned from this challenge. I know how easy it is to be a vegetarian. I grew from being a pescatarian to a full vegetarian. I have talked to others around me and challenged them to try out my diet as well. I can't imagine eating meat for a long time. My conscious will seriously be affected. The next steps I am choosing to take after this challenge are awareness and maybe trying to be a vegan. I think inching into completely cutting out those products from my diet would be awesome. -

Kelsey Roche 4/19/2021 8:12 AMMy diet is impacting deforestation because of the land needed to grow coffee. Exploitative coffee leads to deforestation. Sun-grown coffee plants are causing rainforests to be cut down in order to grow coffee beans. Farmers are also only focusing on growing one type of coffee which can lower biodiversity in areas and cause more disease to the plants. Spreading awareness about coffee causing deforestation can help in small ways with our community. I have been more careful to select coffee that is aware of their problem and trying to fix it. Certified coffee is usually the better option when I decide to buy coffee. Rainforest Alliance Certified, for example, means that the coffee is focusing on the ecological effects and growing the coffee more sustainable. More certifications like this help people make the conscious decision to buy sustainably farmed coffee. -

Kelsey Roche 4/19/2021 8:02 AMThe cost of production for meat is much higher than produce. We have the ability to grow crops in our backyard at a much cheaper and easier rate than meat. Growing a cow, chicken, or pig can be much more challenging. Rich people can afford the high prices of meat. Since the less fortunate cannot, they can choose to grow their own food in their backyard. This is usually why richer countries eat more meat as compared to other places. Eating more meat affects our body's health. Eating red meat can increase your chances of having a heart attack, stroke, or diabetes. Processed meat can do cause the same problems when eating it. The over-consumption of meat causes us to become obese; it isn't natural to eat such high amounts of protein. The meat industry is a major factor in our environmental degradation because of the pollution is creates. Transporting meat across the world releases billions of tonnes of carbon dioxide into our atmosphere. The meat industry is also a reason for droughts. Our water shortage is worsening from the produce and water needed for our cattle just to be slaughtered to eat. Every calorie of meat uses 8x more water than a calorie of produce. Pollution and our water shortage are huge factors as to why our earth is becoming damaged from us through our meat production. If humans cut down their usage of meat, they would be helping their health and the health of the environment. -
Kelsey Roche 4/19/2021 7:26 AMI have now been a vegetarian for two months. I only began to cut fish out of my diet recently because of the "Seaspiracy" documentary that came out on Netflix. I love the way I consciously eat food now. It has been challenging at some points, but I couldn't imagine giving in and eating eat. I will be sticking to this diet, and I have no plans to start eating meat again. I am very excited to see what new recipes I can try. -
Kelsey Roche 3/05/2021 5:16 PMIn this challenge, I wanted to learn about the effects coffee has on our environment. I drink at least 2 cups of coffee a day, so with it being a huge part of my diet, I wanted to know what I could do to remain sustainable with my morning routine. I read an article called Coffee and its Impact on People, Animals and the Planet. This article informed me on many of the problems the coffee industry has on our earth. For starters, I found out that coffee is "the world's second most tradable commodity after oil". This is a huge deal when "2.5 million acres of forest in Central America have been cleared to make way for coffee farming, with the deforestation rising in coffee-growing countries". Workers in the coffee industry also have been shorted money. They only receive 10 percent of the profit. People as well as coffee companies have become more aware with this problem and are making changes. Coffee companies can make their coffee Rainforest Alliance and Fair trade certified. These pledges vow to make their production more sustainable and guarantees a wage for their employees. I am now going to be more intentional when picking out my coffee brand next time I shop.

Kelsey Roche 3/02/2021 7:54 AMI am on my 9th day of eating meatless meals, and it is easier than expected. There will be a couple days where I wake up and crave friend chicken, but I usually will just fix that craving with chickpeas or hummus. Even though they don't taste the same at all, they still make me feel like I am eating greasy protein. I have had some trouble with finding protein alternatives. Hopefully, I will develop a reliable protein shake that will be an easy alternative to make sure I am still strong and healthy.
