Last but not the least, fruits and vegetables are usually less expensive than meat, making them a more affordable and accessible source of nutrition for many people.

"My mission is to continue living a lifestyle that is healthy for both myself as well as our planet, by incorporating more sustainable practices into my day-to-day living. Sustainability is not a novel concept to me. For instance, I walk/use my bicycle to get to the UCLA campus from my apartment, spent over 15 years of my life eating a vegetarian diet, organized a petition in my hometown Gurgaon, India to help curb air pollution and have always been a proponent of recycling household waste. However, there is still a long way to go, and I look forward to contributing more on a personal level in order to lessen my environmental impact. "

REFLECTION QUESTIONFood, Agriculture, and Land Use More Fruits And VeggiesHow does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?
Aniket Saigal 3/15/2023 6:29 PMI am a big fan of strawberries, bananas, raspberries, blackberries, pineapples, apricots, and almost any other fruits. I can get my hands on here in LA - and I try eating at least 2-3 servings of just fruit (not including vegetables) a day. These fruits are an extremely good source of vitamins, minerals, fiber, and antioxidants - which are well known to reduce our risk of developing chronic diseases such as cardiovascular diseases, cancer, and stroke in the future. Of course, eating fruits should be in addition to other vegetables, grains and lentils in order to eat a balanced diet, but the important part is reducing our consumption of meat. The meat industry is a significant contributor to greenhouse gas emissions, deforestation, and water pollution. By reducing our meat consumption, we can reduce our carbon footprint and help mitigate climate change. Moreover, this is a step towards promoting animal welfare, as eating less meat reduces the demand for factory-farmed meat, - often associated with inhumane living conditions for animals. Eating more fruits and vegetables can also reduce food waste, as they have a longer shelf life than meat and dairy products.
Last but not the least, fruits and vegetables are usually less expensive than meat, making them a more affordable and accessible source of nutrition for many people.

NADIA RUIZ 3/16/2023 9:24 PMHi Aniket! I also enjoy eating fruits, especially strawberries, and kiwis. I also like eating carrots and cucumber with lemon. Fruits are also great for a morning smoothie before class! I have noticed that my skin looks nice and clear when I eat a healthier diet with vegetables and fruits. I also have more energy and don't feel as tired. As you mentioned in your post, the meat industry negatively affects our environment, and eating fruits and vegetables can help limit that. Healthier items can be more convenient because they're cheaper when purchased at farmer's markets and can help make for a quick snack! :)

REFLECTION QUESTIONTransportation Go for a Daily WalkWhat have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?
Aniket Saigal 3/13/2023 1:48 AMAside from the well-known benefits of walking (yes, we love the exercise), an interesting observation I made during my walks in the past few weeks has been a significant boost in terms of the amount of new creative ideas that came to my mind during my walks. Some of the ideas have helped improve my life in more tangible ways, while others were merely thoughts that had a subtle influence on my mood or enhanced my perspective on things. In fact, one of my best ideas for my grammar B essay floated into my mind as I was walking in the UCLA Botanical garden a little over a week ago:)
I also read some research from Stanford University that showed that participants' creativity increased by up to 60 percent compared to while they were sitting down on a chair. In my experience, this did hold true for me. I think this might have something to do with increased aerobic function during walking, which leads to increased oxygen supply to the brain - thereby leading to more activity in certain regions of the brain.
Aside from this, I enjoyed the refreshing fresh air blowing on my face, and occasionally running into friends while I was walking around campus.

Gibran Hassan 3/13/2023 8:47 PMI really liked how you looked at specific studies that you used to really help your argument and I really love how you highlighted the other benefits of walking other than just physical exercise. I also agree with you some of my best ideas and creative moments happen when I am out on a walk

REFLECTION QUESTIONAction Track: Building Resilience Forest-Friendly Foods 2How difficult or easy was it to change your diet?
Aniket Saigal 1/24/2023 12:19 AMI usually have about 3 cups of coffee in a week; which means about 1 cup every alternate day. I did not have coffee or chocolate yesterday, so for the purpose of this goal, I was able to complete it. It wasn't very difficult as I am not dependent on any of these substances; however, I do indulge in them once in a while simply because I like them.-
Altamash Mahsud 3/11/2023 2:57 PMHey Aniket! I know this is late, but this is great! These sort of small goals are great to set for yourself, and helps you build confidence towards reaching your bigger goals. I am not a coffee drinker, but I have this problem of not drinking enough water, so I've been trying to set a daily water intake goal for myself. It is definitely a little difficult right now, since I am not used to drinking so much water, but I know this is beneficial for my health. The reason I don't drink enough water is simply because I forget lol, but this daily water intake goal has definitely helped me drink more water each day. -
Shengze Xu 2/11/2023 11:34 AMHi Aniket, I like how you are changing the mood to go already, I am also kinda dependent on coffee recently. Personally, I would like to manage my time better compared to weeks ago. I think by improving this part, I am able to sleep better and a better daily rhythm for study and rest. hopefully coffee leave me.

Aniket Saigal 1/23/2023 2:32 AMMy drawdown eco-challenge is going well so far. Over the past few days, I have continued taking the following actions:
1. Along with my roommates, we have reduced the amount of waste our apartment produces each day; and consistently segregated recyclable waste from the non-recyclable trash, and gotten rid of them accordingly.
2. I ride bird scooters and my bicycle more frequently around UCLA/Westwood, in addition to walking everyday.
3. Most of my meals in a week are plant-based. I do consider milk and eggs to be healthy in moderation and I continue to eat those as well.
I shall try to keep up with my other goals as well and track my progress along the way :)-
Sergio Garcia 2/07/2023 1:03 AMHey Aniket, I feel like the drawdown eco-challenge has allowed me to see more into the actions I may commit that do not demonstrate mindfulness. Around the apartment, I have become accustomed to turning off lights not in use, as well as recycling and sorting my trash. Riding birds or my skateboard around Westwood have been my main source of transportation (until they took away the free bird program but whatever). I now walk most days to and from campus and work, and allow myself to enjoy those calm minutes I can just take for myself. I hope these mindful thoughts and practices continue, as we all strive to be better advocates for change in the treatment of our ecosystem.

Aniket Saigal 1/17/2023 1:09 PMMy dad taught me how to ride a bicycle when I was about 6 years old. This was a skill that has been my companion for all my life since then. Throughout middle school and high school in India, I often used to ride my bicycle to school early in the morning - this used to make me feel energized as I would start the day off with a light exercise that was fun as well as environmentally friendly.
Fast forwarding to 2022-2023 in Los Angeles, where I study Molecular Biology at UCLA - I walked/rode my bicycle to get to campus for the majority of my Junior and Senior year so far, which has been a good exercise for the most part, except for the one knee injury I suffered due to an accident I had.
In addition, I have biked to Marina Del Rey, Santa Monica, Century City, West Hollywood/Beverly Hills to name a few, and have seen many interesting sights and sceneries along the way. I hope to keep this hobby alive in the future as well :)
Attached here is a picture of my bicycle.-
Maeve Lohnes 1/17/2023 4:25 PMHi Aniket, this is such a great alternative to driving, and sounds like it has great health benefits as well! What a wonderful way to experience the city. The one thing that concerns me about biking is how crazy the drivers here can be... so please be safe and wear a helmet!! I would love to start biking here, I think it would make the hills a lot easier as opposed to walking to class!
