Action Track: Healing & Renewal More Fruits And Veggies
How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?

I recently made a stew in which I incorporated a few cups of chopped walnuts, and 2 bags of previously frozen vegetable mixes. I did this so that I could use less meat in the stew but still have similar caloric and nutritional value!

So I noticed that my diet lacks the proper amount of fruit and vegetables that is traditionally recommended for a healthy and diverse diet. As such, when I went to Ralph's yesterday, I decided to grab 3 bags of frozen vegetables. I realized one of the big reasons I find myself not eating vegetables is because of the preparation factor. Though I would eventually like to transition to fresh vegetables, I know I will be very busy in these last few weeks of school. Therefore, frozen vegetables will suffice. Furthermore, I added them to a big stew I made this morning so that I can eat it everyday going forward. I also added walnuts to the stew, which is not quite a fruit or vegetable, but it is healthy!

Hello Tyler! I also find it challenging some days to keep my diet diverse/eat enough vegetables due to the time it might take to cook and prepare. I think making a stew with the frozen vegetables you bought was a great idea! It's definitely challenging to maintain a healthy diet in college; as for me, I always try to eat healthy snacks like baby carrots or fresh fruit, so maybe you can start buying those as well! And if you have a blender, I like putting frozen or fresh spinach whenever I make smoothies as well.

I totally get that. For me, I find that just having a bowl of blueberries or other fruits that don't take that much time to prepare has allowed me to have a lot of fruits everyday. I have also found that pre-made salad bowls as well as salad mixes are a great way to get all your greens and don't take a long time to make. I think that is really cool how you found a way to get all your fruits and vegetable intake in from day to day. As a college student, it is really hard eating healthy at times especially when it takes a lot of time to make something healthier but I like that you are finding ways to be healthy while also dedicating all your time to the last few weeks of school!

What else can you do to hold your organization accountable to implement sustainable practices?

A really big issue that I see in my housing organization is people leaving their air conditioning units on even when they are not home. I think an easy way to help remind guys to turn them off is if I create little flyers that contain a statistic describing how much energy costs and how much the AC unit uses. That might sway guys into turning the units off when not using them. Another way to encourage guys to be sustainable in the kitchen is to get them to wash glasses so that we can decrease our use of single use plastic cups. Showing them how much the plastic cups cost will likely sway them against using it.

Leaky faucets. We see them all the time. Often times we ignore them thinking "oh, I'll fix that tomorrow" or "I'll call tomorrow to get maintenance over" but then that turns into the next day, then week then month and-- It's really easy to keep putting off something as simple as a leaky faucet because it does not perceptibly impact our lives that much. If it was a broken lightbulb, yes because you can't see in the dark. But a leaky faucet is much more benign. Nonetheless, we have to understand that water wasted is WASTED, and that builds up over time. Those few droplets accumulate to be gallons and gallons as long as you ignore the problem. The problem grows. Don't be lazy, help your water bill and the environment and fix that leaky faucet!

Hi Tyler, I totally agree that this is an issue. We really should be able to take steps to fix the problem as soon as we notice it to avoid water waste. Our positive impact on the environment is made through small steps, and having everyone do the small steps, so it's critical that we don't waste water.

What have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?

Something that I have really started to think about since I've been going on these walks into town, is that our city is VERY car-centric. Sure we have sidewalks for pedestrians to walk on, but every curb is always occupied bumper to bumper with some car. I wish public transportation was more popular so that we don't have to deal with all the clutter of vehicles. Also, the emission of greenhouse gases would go way down too!

Hi Tyler, I agree! Just walking around Westwood, I've also noticed how uneven the sidewalks are. I've always enjoyed looked at the different houses and little apartment buildings in Westwood since they're all designed so differently, but it's almost to impossible to walk around without tripping if you're not paying attention to the sidewalk. Even if the city were more walkable, pedestrians still have to be conscious about dangerous drivers. I agree with your point that if there should be more public transportation and a decrease in personal cars, to not only lower the emission of greenhouse gases but also to make the streets more safe for pedestrians.

I completely agree with this! In walkable cities like San Fransisco, there are fewer cars on the streets, more public transportation is used, and everything is more peaceful. Even if more vehicles were electric instead of running on gas, we'd be able to decrease the amount of CO2 emitted by a large margin.

This past monday at my chapter meeting for my fraternity, I gave a quick 3-minute talk about how we can reduce our carbon footprint by turning off lights when we aren't using them, selecting cold water for the laundry machine, turning off A/C machines we are not home, and limiting showers. I talked about how doing all of the actions above would lead to lower bills for the house, thereby leaving more money that can be invested into us and our fraternity. The speech was well received and I hope that the guys follow through and at least attempt a few of the actions. Since there is over 25 guys living here, if we could each take part in some of these actions then both the environment and our bills would benefit!
