Days like today make you want to either avoid your daily challenge commitment or just stay inside, as the high temperature is in the low 50's. However it is no big deal to bundle up and continue to ride my bike the short distance to campus and back. I can get a good wake up from the cold and a good flow of blood with the exercise. The rewards keep coming as I also save more money that I would have to use for gas. All of these on top  of making my carbon output for the day less than if I used a gas powered vehicle.

Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

When I eat it is very easy to want to find something else do look at or distract myself with while I eat. This could lead to me no focusing on the amount I chew and could effect my digestion as it is important to have well masticated food. I also am able to just enjoy my food much more and not neglect the blessing of having food daily. Lastly, I am able to focus on my mannerisms and posture as I eat which could develop into a good habit.

How can spending more time outdoors enhance your sense of place -- your deep knowledge of and appreciation for your surroundings?

Spending time away from the technology we are surrounded with every day can lead to more appreciation for the environment we live in. It is too common and easy to neglect our physical nature that we live in and around. By finding a little time each day or even once a week can help with mood as direct sunlight is great for anyone who does not get the recommended exposure daily.

Having been without a car for just over a week now I hardly have a choice to ride my bike. I ride on campus at least once a day and some more if I go back to the gym or just for a ride. My stamina has improved along with my appreciation for saving gas.

Having committed to taking time to eat mindfully has helped me appreciate each meal I make and eat. The time allows me to reflect on my day or my week without distraction of anything on social media. Having clear headspace can help with focusing on what is in front of you. In my case, it was food. I was able to consume my food at a respectful rate so I could reach my goal of eating how much I need.
